Ingredients:
- 1 lb ground lamb
- 2 1/2 tsp dried rosemary
- 2 tsp dried oregano
- 2 large garlic cloves, grated
- 1/4 small onion, grated
- 1 tsp kosher salt
- 1 large egg yolk
- 3 tbsp plain breadcrumbs (panko works well)
- 2 tbsp + 1 tsp olive oil
- 1 tsp dried dill
- 2 tsp lemon juice
- 1 medium cucumber, very thinly sliced
- 15 mini pitas
Instructions:
- Prepare the Meat: In a large bowl, combine ground lamb, rosemary, oregano, garlic, onion, salt, egg yolk, and breadcrumbs. Mix well.
- Form Patties: Shape the mixture into 15 patties, slightly larger than the mini pitas.
- Cook the Patties: Heat a large skillet or griddle over medium-high heat. Add 1/2 tablespoon olive oil. Cook half of the patties until browned and cooked through, about 2-3 minutes per side. Repeat with the remaining patties, adding more oil as needed.
- Make the Sauce: In a small bowl, combine Greek yogurt, dill, lemon juice, and remaining olive oil. Season with salt and pepper.
- Assemble the Gyros: Cut a slit in each pita to fit the lamb patty. Fill each pita with a lamb patty, a dollop of dill sauce, and cucumber slices.
Tip: For a more authentic flavor, consider grilling the lamb patties instead of pan-frying.;
