Ingredients:
For the Crust:
- 2 1/2 cups crushed Ritz crackers
- 8 tablespoons butter, melted
- 2 tablespoons honey
For the Custard:
- 4 egg yolks
- 1/4 cup cornstarch
- 1/3 cup honey
- 2 cups whole milk
- 1 pinch sea salt
- 1 tablespoon vanilla extract
- 3 tablespoons butter, at room temperature
For the Topping:
- 2 cups mixed berries
- 1 peach, nectarine, or plum, sliced
- Fresh thyme, for garnish
Instructions:

Prepare the Crust:
- Combine cracker crumbs, melted butter, and honey in a bowl.
- Press the mixture into a greased 8x12 inch baking pan.
- Freeze the crust for at least 30 minutes.

Make the Custard:
- Whisk together egg yolks and cornstarch in a large pot.
- Add honey, milk, and salt.
- Cook over medium-high heat, stirring constantly, until thickened.
- Remove from heat, stir in vanilla and butter.
- Let cool for 10 minutes.

Assemble and Chill:
- Spread the cooled custard over the chilled crust.
- Cover and refrigerate for at least 1 hour or up to 2 days.

- Top with mixed berries, sliced fruit, and fresh thyme.
- Drizzle with honey and serve.
