No Bake Mixed Berry Custard Tart


Ingredients:

For the Crust:

  • 2 1/2 cups crushed Ritz crackers
  • 8 tablespoons butter, melted
  • 2 tablespoons honey

For the Custard:

  • 4 egg yolks
  • 1/4 cup cornstarch
  • 1/3 cup honey
  • 2 cups whole milk
  • 1 pinch sea salt
  • 1 tablespoon vanilla extract
  • 3 tablespoons butter, at room temperature

For the Topping:

  • 2 cups mixed berries
  • 1 peach, nectarine, or plum, sliced
  • Fresh thyme, for garnish

Instructions:

  1. Prepare the Crust:

    • Combine cracker crumbs, melted butter, and honey in a bowl.
    • Press the mixture into a greased 8x12 inch baking pan.
    • Freeze the crust for at least 30 minutes.
  2. Make the Custard:

    • Whisk together egg yolks and cornstarch in a large pot.
    • Add honey, milk, and salt.
    • Cook over medium-high heat, stirring constantly, until thickened.
    • Remove from heat, stir in vanilla and butter.
    • Let cool for 10 minutes.
  3. Assemble and Chill:

    • Spread the cooled custard over the chilled crust.
    • Cover and refrigerate for at least 1 hour or up to 2 days.
  4. Serve:

    • Top with mixed berries, sliced fruit, and fresh thyme.
    • Drizzle with honey and serve.
