Brisket Grilled Cheese Sandwich

Ingredients:

  • 4 slices sourdough bread
  • 1/2 lb leftover smoked BBQ brisket, chopped
  • 12 slices sharp cheddar cheese
  • 12 slices pepper jack cheese
  • 12 slices mozzarella cheese
  • Butter (for spreading)

Instructions:

  1. Preheat the pan:
Heat a skillet or cast iron pan over medium heat.

  2. Prepare the bread:
Slice the sourdough bread into 1/4 to 1/2-inch slices. Spread 1/2 to 1 tablespoon of butter on one side of each slice of bread.

  3. Assemble the sandwich:

    • Place a slice of bread, buttered-side down, onto the skillet.
    • Layer the unbuttered side with 1 slice of cheddar, 1 slice of pepper jack, and 1 slice of mozzarella cheese, overlapping them slightly to ensure full coverage.
    • Add 1/8 to 1/4 pound of chopped brisket on top of the cheese.
    • Layer with another slice of cheddar, pepper jack, and mozzarella cheese, again overlapping to cover the brisket.
    • Place the second slice of bread on top, unbuttered side down.
  4. Grill the sandwich:
Cook the sandwich covered for 3 to 4 minutes on each side until the bread is golden brown and the cheese is melted.

  5. Repeat:
Repeat the process for additional sandwiches.

Notes:

  • Feel free to add your favorite barbecue sauce to the brisket before placing it on the sandwich for extra flavor.
