Grilled Chicken Souvlaki


Ingredients for Grilled Greek Souvlaki Chicken:

  • 1 ½ lbs Chicken Breasts (sliced into bite-sized pieces)
  • 5 Garlic Cloves (minced)
  • 2 tbsp Oregano (chopped fresh or dried)
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • ¼ cup Olive Oil
  • 1 Lemon (juice and zest)

For the Platter:

  • Fries (homemade or store-bought)
  • Tomato & Cucumber Salad (tossed in a vinaigrette)
  • Hummus and/or Tzatziki
  • Feta Cheese (crumbled)
  • Pepperoncini and/or Olives
  • Red Onion (thinly sliced)
  • Pita Bread (optional)

Instructions:

For the Chicken:

  1. Marinate the chicken: In a large bowl, combine the sliced chicken, minced garlic, oregano, salt, black pepper, olive oil, lemon zest, and lemon juice. Mix everything well until the chicken is fully coated in the marinade.

  2. Let it marinate: Cover the bowl and place it in the fridge to marinate for at least 2 hours. If you have more time, let it marinate overnight for even more flavor. If you're short on time, 30 minutes will work too, though the chicken will be more tender the longer it sits.

For Grilling:

  1. Preheat your grill: Set your Masterbuilt Gravity Series Charcoal Grill (or any grill) to 425°F (220°C).

  2. Prepare the skewers: Thread the marinated chicken pieces onto wooden or metal skewers, making sure not to overcrowd them so the chicken cooks evenly.

  3. Grill the chicken: Place the skewers directly on the grill racks. Grill for about 5-6 minutes, then carefully brush the chicken with more olive oil or drizzle it to keep it moist.

  4. Flip the chicken: After 5-6 minutes, flip the skewers and cook for another 5-6 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F). The chicken should be golden-brown on the outside with a nice char.

For the Platter:

  1. Prepare sides: While the chicken is grilling, you can prepare your sides:
    • Make some fries (either homemade or store-bought).
    • Prepare a tomato and cucumber salad and toss it in a light vinaigrette dressing.
    • Arrange some hummus or tzatziki on the platter for dipping.
    • Crumble some feta cheese, slice some red onions, and prepare pepperoncini or olives for garnish.
  2. Serve: Once the chicken is cooked, carefully remove the skewers from the grill and arrange them on a platter. Serve the chicken alongside your fries, salad, and dips. Optionally, add pita bread for wrapping or dipping.
