Keto Almond Flour Bagels

Ingredients:

  • 2 cups almond flour
Almond flour is used as a low-carb alternative to traditional wheat flour. It has a nutty flavor and a light texture, making it the perfect base for these gluten-free bagels. Be sure to use blanched almond flour for the smoothest texture.

  • 1 tbsp baking powder
Baking powder is essential to help the bagels rise and become fluffy. It works well in gluten-free baking to give structure and lift.

  • 1/2 tsp salt
Salt enhances the flavor of the bagels. It also balances out the richness of the mozzarella cheese and the nutty flavor of the almond flour.

  • 2 large eggs
Eggs are the binding agent in this recipe. They provide moisture and structure, and they help hold the dough together.

  • 2 cups shredded mozzarella cheese
Mozzarella cheese is the secret ingredient that gives these bagels their chewy, dough-like texture. It melts well, creating a pliable dough that's easy to shape into bagels. It also contributes to the delicious flavor and texture of the bagels.

  • 1 tbsp everything bagel seasoning (optional)
Everything bagel seasoning is an optional, but highly recommended, topping for these bagels. It adds a delicious mix of sesame seeds, poppy seeds, garlic, and onion to give your bagels that classic bagel shop flavor.

Instructions:

  1. Preheat the Oven:
Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper to ensure the bagels don’t stick while baking.

  2. Mix Dry Ingredients:
In a bowl, combine the almond flour, baking powder, and salt. Whisk together until well combined. This mixture will form the dry base of the dough for your bagels.

  3. Melt the Mozzarella Cheese:
In a microwave-safe bowl, melt the mozzarella cheese in the microwave for about 1 minute, or until it is completely melted and smooth. Stir the cheese to make sure it’s melted evenly. You can also melt the cheese in a saucepan over low heat if you prefer, but microwaving works well and is quicker.

  4. Combine Wet and Dry Ingredients:
Add the melted mozzarella cheese to the almond flour mixture. Then, crack the eggs into the bowl and stir everything together until a dough forms. The mixture will be sticky and a bit tough to stir at first, but just keep mixing until it fully comes together into a dough.

  5. Shape the Bagels:
Divide the dough into 6 equal portions. Lightly grease your hands or use parchment paper to help shape each portion into a round bagel shape. To do this, roll each portion into a ball, then use your fingers to create a hole in the center, forming a bagel. Place each shaped bagel onto the prepared baking sheet.

  6. Add Everything Bagel Topping (Optional):
If you’re using everything bagel seasoning, sprinkle it over the top of each bagel now. The seasoning will add that signature crunch and flavor that makes bagels so irresistible.

  7. Bake:
Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the bagels are golden brown on top. Keep an eye on them toward the end to ensure they don't over-bake. They should be firm to the touch and lightly browned when they’re ready.

  8. Cool Before Serving:
Let the bagels cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. This will allow them to firm up and be easier to slice.

Recipe Notes:

  • Cheese Variations:
If you're not a fan of mozzarella, you can experiment with other cheeses like cheddar or Monterey Jack. These will change the flavor and texture of your bagels, but they’ll still be delicious.

  • Bagel Size:
You can easily adjust the size of your bagels. For smaller bagels, divide the dough into 8 portions, and for larger bagels, you can make 4 portions instead of 6. Just be sure to adjust the baking time slightly if you change the size.

  • Dough Consistency:
If your dough feels too sticky or wet to shape, you can add a little more almond flour, 1 tbsp at a time, until you get a more manageable dough. If it's too dry, you can add a tiny bit of water or olive oil to moisten it.

  • Storage:
Store the bagels in an airtight container at room temperature for 3-4 days. For longer storage, you can freeze them for up to 1 month. When ready to eat, simply toast them or warm them up in the oven to get that freshly-baked texture.

  • Serving Ideas:
These almond flour bagels are perfect for breakfast or a light lunch. You can slice them and spread cream cheese, avocado, or your favorite spread on them. They also make a great base for a low-carb sandwich with deli meats, veggies, and cheese.
