Moist Applesauce Oatmeal Muffins


Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1 cup old-fashioned or quick-cooking oats
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup oil (canola or vegetable)
  • 1 teaspoon vanilla extract
  • 1 cup applesauce
  • 1 tablespoon oats (optional, for topping)
Optional additions:
  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup raisins or dried cranberries
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves

Instructions:

  1. Preheat and prep: Preheat oven to 375°F (190°C). Prepare muffin tins with nonstick spray or liners.
  2. Combine dry ingredients: In a mixing bowl, combine flour, oats, sugar, baking powder, cinnamon, baking soda, salt, and optional additions (nuts, dried fruit, nutmeg, cloves). Mix well.
  3. Mix wet ingredients: In a separate bowl, mix milk, egg, oil, and vanilla extract. Whisk until combined.
  4. Combine wet and dry: Pour wet ingredients into the bowl with dry ingredients. Add applesauce. Stir until just combined; some lumps are okay.
  5. Fill muffin tins: Scoop batter into muffin tins, filling each cup about two-thirds full. Sprinkle with oats (optional).
  6. Bake and cool: Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for 3-5 minutes, then transfer to a rack to cool completely or enjoy warm.

Optional additions:

  • For extra flavor: Add chopped nuts, dried fruit, or spices like nutmeg or cloves to the batter.
  • For a sweeter taste: Drizzle with honey or maple syrup after baking.
  • For a healthier twist: Use whole wheat flour instead of all-purpose flour.
