Sheet Pan Chicken & Mixed Vegetables


Ingredients:

  • 1 packet McCormick® ONE Farmer’s Market Chicken Sheet Pan Seasoning Mix
  • 2 tablespoons olive oil
  • 1 1/2 pounds boneless chicken thighs
  • 1 cup potatoes, cut into 1" chunks
  • 1 cup broccoli, cut into 1" chunks
  • 1 cup mixed bell peppers, cut into 1" chunks
  • 1 cup onions, cut into 1" chunks
  • 1 head garlic, cloves separated & peeled
  • 3-4 slices thick bacon, diced

Instructions:

  1. Preheat the oven to 400°F. Line a sheet pan with aluminum foil and grease it or spray with non-stick cooking spray.
  2. In a large bowl, combine the seasoning mix and olive oil. Stir well to create a seasoning mixture.
  3. Add the chicken, chopped vegetables, and bacon to the bowl with the seasoning mix. Toss to coat everything evenly with the seasoning.
  4. Spread the chicken and vegetables evenly on the prepared sheet pan.
  5. Bake for 30 minutes or until the chicken is cooked through and the vegetables are tender.
