Tomato & Chèvre Grilled Cheese Sandwich


This recipe is a delightful twist on the classic grilled cheese sandwich, featuring the creamy tang of chèvre goat cheese, the richness of cheddar, and a burst of freshness from tomatoes and dill. Perfect for a quick meal or snack!

Ingredients (Servings: 1)

  • 2 slices of sourdough bread
  • 2-3 thinly sliced tomatoes
  • 1 tsp Everything Bagel Seasoning
  • Pinch of salt
  • 2 tbsp chèvre goat cheese
  • 1-2 slices of cheddar cheese
  • 1 tbsp butter or olive oil
  • Fresh dill (optional)

Instructions

  1. Prepare the Bread:

    • Brush the outside of the sourdough bread slices with butter or olive oil to ensure a crispy, golden crust.
  2. Assemble the Sandwich:

    • Spread goat cheese on one inside slice of the bread.
    • Layer the sliced tomatoes on top of the goat cheese, then sprinkle the tomatoes with a pinch of salt and Everything Bagel Seasoning for extra flavor.
    • Add fresh dill (if using) and top with a slice or two of cheddar cheese.
    • Place the other slice of bread on top, butter-side out, to complete the sandwich.
  3. Grill the Sandwich:

    • Heat a skillet or griddle over medium heat. Once hot, place the sandwich on it and cook for about 2-3 minutes per side, pressing gently to ensure even browning.
    • Flip the sandwich carefully when the first side is golden and crispy, allowing the cheddar to melt and the bread to get perfectly toasted.
  4. Serve and Enjoy:

    • Remove from the skillet and let it cool slightly before slicing in half. Enjoy immediately while the cheese is melty and delicious!

Tips:

  • If you prefer a bit more tanginess, add a drizzle of balsamic reduction or a few slices of pickled onions inside the sandwich.
  • You can substitute the cheddar with another cheese of your choice, like mozzarella or Swiss, for different flavor profiles.
