Fried Chicharrones with Guacamole


Ingredients:

For the Chicharrones:

  • 1 lb pork belly (cut into cubes)
  • 2 tbsp vegetable oil
  • Salt to taste

For the Guacamole:

  • 2 ripe avocados (mashed)
  • 1 small onion (finely chopped)
  • 1 lime (juiced)
  • 1 tomato (diced)
  • Salt and pepper to taste

Instructions:

Step 1: Fry the Chicharrones

  • Heat the vegetable oil in a pan over medium-high heat.
  • Add the pork belly cubes and fry them until crispy and golden brown, about 10-12 minutes.
  • Once crispy, drain the chicharrones on paper towels and season with salt to taste.

Step 2: Make the Guacamole

  • In a bowl, mash the avocados until smooth.
  • Add the chopped onion, diced tomato, lime juice, and season with salt and pepper to taste. Stir everything together until well combined.

Step 3: Serve

  • Serve the crispy chicharrones with the freshly made guacamole on the side for dipping.
