Ingredients:
- 16 oz frozen spinach (thawed and drained) or 1 lb fresh spinach (sautéed and drained)
- 1 cup crumbled feta cheese
- 1 cup ricotta cheese
- ½ cup grated Parmesan cheese
- 2 large eggs
- 1 small onion (finely chopped, optional)
- 2 cloves garlic (minced)
- 1 tsp dried oregano
- ½ tsp nutmeg (optional)
- Salt and pepper to taste
- 1 tbsp olive oil (for sautéing spinach or onions)
- ½ cup breadcrumbs (optional, for topping)
- 2 tbsp melted butter (optional, for breadcrumbs)
Instructions:
Preheat the oven: Set your oven to 350°F (175°C) and lightly grease a 9x9-inch or 9x13-inch baking dish.
Prepare the spinach:
- If using frozen spinach, make sure it’s fully thawed, then press out any excess water.
- If using fresh spinach, sauté it in 1 tablespoon of olive oil until wilted. Drain any excess moisture and set it aside.
Sauté onions and garlic (optional):
In the same skillet, sauté the chopped onion in a little olive oil until softened (about 3-4 minutes). Add the minced garlic and cook for another minute until fragrant. Set this aside.Prepare the filling:
In a large mixing bowl, combine the prepared spinach, crumbled feta, ricotta cheese, grated Parmesan, eggs, and sautéed onion and garlic (if using). Stir to combine. Add the oregano, nutmeg (if using), salt, and pepper. Mix well to ensure all ingredients are evenly distributed.Transfer to baking dish:
Pour the spinach mixture into your prepared baking dish, spreading it evenly.Optional breadcrumb topping:
If you want a crispy topping, mix the breadcrumbs with the melted butter in a small bowl. Sprinkle this evenly over the spinach mixture in the baking dish.Bake the casserole:
Place the casserole in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the casserole is set.Cool and serve:
Let the casserole cool for about 5 minutes before slicing and serving.
Notes:
- For a creamier texture, you can add 1 cup of cream or half-and-half to the mixture before baking.
- This dish pairs wonderfully with roasted chicken or grilled meats, or can be served as a vegetarian main course.
- For added flavor, consider adding sautéed mushrooms or bell peppers.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days and can be reheated in the oven or microwave.
Enjoy your delicious spinach casserole!
