4 slices thick-cut bacon

4 boneless, skinless chicken breasts (about 1¾ lbs.)

Kosher salt, to taste

Freshly ground black pepper, to taste

2 teaspoons ranch seasoning

1½ cups shredded mozzarella cheese

Chopped fresh chives, for garnish
🍳 Directions
Step 1:
In a large skillet over medium heat, cook the bacon, flipping once, until crispy, about 8 minutes. Transfer to a paper towel–lined plate. Carefully drain all but 2 tablespoons of bacon fat from the skillet.
Step 2:
Season the chicken breasts on both sides with salt and pepper. Return the skillet to medium-high heat, add the chicken, and cook until golden brown and cooked through, about 6 minutes per side.
Step 3:
Reduce heat to medium. Sprinkle ranch seasoning over the chicken, then top each breast with shredded mozzarella. Cover the skillet and cook until the cheese is melted and bubbly, about 5 minutes.
Step 4:
Crumble the cooked bacon and sprinkle over the chicken along with chopped chives. Serve immediately.
