🍗 Chicken Roulade with Spinach & Mozzarella

👨🍳 Instructions
1. Prep the Chicken
Pound the chicken breasts to an even thickness using a meat mallet. This helps them cook evenly and makes rolling easier.
2. Cook the Filling
In a skillet, heat olive oil over medium heat. Sauté garlic for 30 seconds, then add spinach and red bell peppers. Cook until spinach is wilted and peppers soften slightly.
3. Assemble the Roulades
Lay out the flattened chicken breasts. Spoon the spinach-pepper mixture evenly across each, then sprinkle with shredded mozzarella. Roll each breast tightly from end to end.
4. Secure & Season
Secure each roll with toothpicks. Season all sides with salt and pepper.
5. Sear & Bake
Preheat oven to 375°F (190°C). In the same skillet, sear the chicken roulades on all sides until golden (about 2–3 minutes per side).
Transfer to a baking dish, sprinkle breadcrumbs over the tops, and bake for 25–30 minutes or until fully cooked through (internal temp: 165°F/74°C).
6. Serve
Let rest for 5 minutes before slicing. Serve warm with your favorite side dish or salad.
