Bruschetta Frico Cups


🧀 Parmesan Cups with Tomato-Blue Cheese Bruschetta

Crispy parmesan cheese cups filled with sweet cherry tomatoes, tangy blue cheese, crispy prosciutto, and a drizzle of balsamic and honey—these elegant bites are perfect for parties and gatherings.


🛒 Ingredients

For the Parmesan Cups

  • 2 cups Parmesan cheese, freshly grated

  • A few sprigs of fresh thyme, leaves removed

For the Filling

  • 1 pack Sunset Sugar Bomb cherry tomatoes, quartered

  • 1 cup blue cheese, crumbled

  • 2 slices prosciutto

  • 2 tbsp capers

  • ¼ cup fresh parsley, finely chopped

  • Sea salt and black pepper, to taste

  • Balsamic glaze, for drizzling

  • Hot or regular honey, for drizzling


👨‍🍳 Instructions

Step 1: Bake the Prosciutto

  1. Preheat oven to 375°F (190°C).

  2. Line a baking sheet with parchment paper and lay the prosciutto slices flat.

  3. Bake for 10–12 minutes, until crisp. Remove and let cool, then break into small pieces.

Step 2: Make the Parmesan Cups

  1. Increase oven temperature to 400°F (200°C).

  2. In a bowl, mix grated Parmesan cheese with thyme leaves.

  3. Line a baking sheet with parchment. Drop small handfuls of the cheese mixture (about 2 tablespoons each) onto the sheet, spaced 1 inch apart. Flatten into thin, 2-inch wide rounds.

  4. Bake at 375°F for 8 minutes, then raise the heat to 400°F and continue baking for 2–3 minutes, until edges are golden.

  5. While still hot and pliable, use a spatula to transfer each cheese round to a muffin tin. Gently press down into the cups to shape.

    • If the cheese hardens too quickly, return rounds to the oven for 1 minute to soften again.

Step 3: Prepare the Filling

  1. In a bowl, combine:

    • Quartered cherry tomatoes

    • Crumbled blue cheese

    • Crispy prosciutto pieces

    • Capers

    • Chopped parsley

    • Salt and pepper to taste

  2. Mix well and taste for seasoning.

Step 4: Assemble and Serve

  1. Once the parmesan cups are cool and firm, spoon in the bruschetta mixture.

  2. Drizzle each cup with a touch of balsamic glaze and hot or regular honey.

  3. Serve immediately and enjoy!

  • You can prepare both the parmesan cups and the bruschetta mixture ahead of time.

  • Wait to fill the cups until just before serving to keep them crisp.
