Easy Taco Slaw

🌮 Zesty Taco Slaw

A crunchy, creamy cabbage slaw with lime and cilantro—perfect for loading into tacos or serving as a fresh side!


📋 Ingredients

🥬 Slaw Base

  • 6 tightly packed cups green cabbage, finely shredded (about ¼ head)

  • 1 cup green onion, finely sliced on the diagonal

  • ▢ ½ cup fresh coriander/cilantro leaves, finely chopped


🥣 Taco Slaw Dressing

  • ▢ ½ cup sour cream (or plain yogurt as a lighter substitute)

  • 2 tbsp mayonnaise (or sub 1 tbsp olive oil for a lighter version)

  • 2 tsp lime zest

  • 1 tbsp lime juice

  • ▢ ½ tsp kosher/cooking salt (use ¼ tsp if using table salt)


👨‍🍳 Instructions

1. Mix the Dressing

In a large bowl, whisk together all the dressing ingredients until smooth.


2. Toss the Slaw

Add cabbage, green onion, and cilantro to the bowl. Toss thoroughly with tongs or your hands to coat everything evenly.


3. Rest & Wilt

Let the slaw sit for at least 1 hour at room temperature or in the fridge. This allows the cabbage to soften and the flavors to meld. Toss again before using.

  • Yield: Enough for 12–16 tacos.

  • Make Ahead: Keeps up to 3 days in the fridge. The dressing may thin slightly as the cabbage releases moisture, but flavor improves with time!

  • Uses: Excellent in fish, pork, shrimp, or veggie tacos, or as a refreshing side salad.
