Garlic Parmesan Chicken Rice Casserole


🧄 Cheesy Baked Chicken & Rice Casserole

Creamy, garlicky, and packed with flavor — this no-fuss weeknight dinner is a family favorite in the making.


🛒 Ingredients

  • 2 bags (5.4 oz each) Knorr Creamy Chicken or Herb & Butter Rice

  • 2 cups cooked or rotisserie chicken, shredded or diced

  • 3½ cups chicken stock (or hot water + 1 heaping tbsp granulated bouillon)

  • ⅔ cup white wine

  • ⅔ cup grated Parmesan cheese, plus more for topping

  • 5 garlic cloves, minced

  • 4 tbsp salted butter, melted

  • 1–2 tsp red pepper flakes (adjust to heat preference)

  • 1½ cups shredded Monterey Jack cheese

  • ½ tsp each: salt and pepper


👩‍🍳 Instructions

  1. Preheat & Prep
    Preheat your oven to 375°F (190°C).
    Lightly grease a 9x13-inch baking dish with cooking spray or butter.

  2. Combine Everything
    Add all the ingredients directly into the baking dish — rice packets, chicken, stock (or bouillon mix), wine, cheeses, garlic, butter, red pepper flakes, salt, and pepper.
    Use a whisk or spoon to stir everything together until evenly distributed.

  3. Bake
    Place the dish in the oven and bake uncovered for 30–40 minutes, or until most of the liquid has been absorbed and the rice is tender.

  4. Rest & Finish
    Remove from the oven and let it rest for 10 minutes. This helps the remaining liquid soak in and thickens the casserole.
    Top with a little extra Parmesan before serving, if desired.

  • Spinach (fresh or thawed frozen) for a veggie boost

  • Crushed Ritz or panko topping for a buttery crunch

  • Sun-dried tomatoes or mushrooms for added depth
