
🧄 Cheesy Baked Chicken & Rice Casserole
Creamy, garlicky, and packed with flavor — this no-fuss weeknight dinner is a family favorite in the making.
🛒 Ingredients

2 bags (5.4 oz each) Knorr Creamy Chicken or Herb & Butter Rice

2 cups cooked or rotisserie chicken, shredded or diced

3½ cups chicken stock (or hot water + 1 heaping tbsp granulated bouillon)

⅔ cup white wine
-
⅔ cup grated Parmesan cheese, plus more for topping

5 garlic cloves, minced
-
4 tbsp salted butter, melted

1–2 tsp red pepper flakes (adjust to heat preference)

1½ cups shredded Monterey Jack cheese

½ tsp each: salt and pepper
👩🍳 Instructions

Preheat & Prep
Preheat your oven to 375°F (190°C).
Lightly grease a 9x13-inch baking dish with cooking spray or butter. -
Combine Everything
Add all the ingredients directly into the baking dish — rice packets, chicken, stock (or bouillon mix), wine, cheeses, garlic, butter, red pepper flakes, salt, and pepper.
Use a whisk or spoon to stir everything together until evenly distributed. -
Bake
Place the dish in the oven and bake uncovered for 30–40 minutes, or until most of the liquid has been absorbed and the rice is tender. -
Rest & Finish
Remove from the oven and let it rest for 10 minutes. This helps the remaining liquid soak in and thickens the casserole.
Top with a little extra Parmesan before serving, if desired.
