🍢 Greek-Inspired Chicken Skewers with Caramelized Onions

Juicy marinated chicken grilled to perfection and topped with golden onions—perfect on gluten-free ciabatta or your favorite bun.


🛒 Ingredients

🍗 Chicken & Aromatics

  • 1 ½ lbs boneless, skinless chicken thighs (or breasts)

  • 1 sweet onion, sliced into half-moon slices

  • 6 cloves garlic, smashed

🧄 Marinade

  • ▢ ½ cup avocado oil

  • Juice of 1 lemon

  • ▢ ¾ cup red wine vinegar

  • ▢ ½ teaspoon onion powder

  • ▢ ½ teaspoon garlic powder

  • 2 teaspoons dried oregano

  • 3 bay leaves

  • 1 teaspoon salt

  • ▢ ¼ teaspoon black pepper

👨‍🍳 Instructions

  1. Marinate the Chicken:
    Place chicken, sliced onions, and smashed garlic in a zip-top bag or airtight container.
    In a bowl, whisk together all marinade ingredients. Pour over chicken, seal, and refrigerate overnight.

  2. Prep the Skewers:
    If using wooden skewers, soak in water for at least 20 minutes to prevent burning.

  3. Grill the Chicken:
    Heat a grill pan over medium-high heat and spray lightly with avocado or olive oil.
    Thread chicken pieces onto skewers.
    Grill for 4–5 minutes per side, or until cooked through and lightly charred.

  4. Caramelize the Onions:
    Remove skewers and reduce heat to medium. Add the marinated onions to the same pan and sauté for 10–12 minutes until soft and golden.

  5. Serve & Enjoy:
    Pile the grilled chicken and onions onto toasted gluten-free ciabatta or buns. Optional: add a swipe of tzatziki or fresh herbs.

  • 🔥 Using an outdoor grill? Preheat to 450°F and grill chicken for 4 minutes per side, rotating 3 times for even cooking.

  • 🥗 These skewers are also great over rice bowls or salad greens for a lighter option.
