1. Make the Filling & Potato Mixture

In a bowl, mix mashed potatoes with cheddar cheese until well combined.

In a separate bowl, mix the chopped turkey and gravy until evenly coated.
2. Shape the Potato Balls

Scoop about ¼ cup of the mashed potato mixture and flatten it in your palm.

Spoon 1 tablespoon of the turkey mixture into the center.

Gently wrap the mashed potatoes around the filling and form into a sealed ball.

Place on a parchment-lined tray and repeat with the remaining mixture.
3. Chill the Balls

Freeze the shaped potato balls for 15 minutes to help them firm up before breading.
4. Bread the Potato Balls

Prepare 3 shallow bowls: one each for flour, beaten eggs, and breadcrumbs.

Roll each potato ball in flour, dust off excess, dip in egg, then coat in breadcrumbs.

Return to the tray. Repeat until all are breaded.

Freeze again for 10 minutes to set the coating.
5. Fry Until Golden
