Thanksgiving Sausage Stuffing


🍞 Savory Sausage & Herb Bread Stuffing

This classic stuffing is rich with sweet Italian sausage, sautéed aromatics, fresh herbs, and rustic chunks of bread—all baked to golden perfection. A hearty side that’s a holiday staple or comfort food favorite!


📝 Ingredients

Bread & Base

  • 1 (18 oz) loaf stale Italian or French bread, cut into 1-inch cubes

  • 3 cups chicken broth

  • 2 large eggs, beaten

Meat & Veggies

  • 8 oz sweet Italian sausage (casings removed)

  • 6 tbsp unsalted butter (plus more for greasing)

  • 1 medium onion, diced

  • 1 shallot, diced

  • 2 garlic cloves, minced

  • 3 stalks celery, sliced

  • 4 oz mushrooms, roughly chopped

Herbs & Seasoning

  • ½ tbsp chopped fresh sage

  • ½ tbsp chopped fresh rosemary

  • ½ tbsp chopped fresh thyme

  • ¼ cup chopped parsley

  • 2 tsp kosher salt

  • 1 tsp ground black pepper


👩‍🍳 Instructions

1. Prep & Toast the Bread

  • Preheat oven to 375˚F. Grease a 13 inch casserole dish with butter.

  • If your bread isn’t already stale, toast the cubes in the oven for about 10–15 minutes until slightly crisp and dry.

2. Cook the Sausage

  • Heat a large pan over medium-high heat.

  • Add sausage and cook, breaking it up, until fully browned.

  • Remove sausage and set aside in a bowl.

3. Sauté Aromatics

  • Wipe out excess grease from the pan.

  • Melt 6 tbsp butter over medium heat.

  • Add onion, shallot, and garlic. Cook until soft and translucent, about 3–5 minutes.

  • Stir in celery and mushrooms. Cook until celery is tender and mushrooms soften, about 5 more minutes.

4. Add Herbs & Sausage

  • Remove from heat. Stir in sage, rosemary, thyme, parsley, salt, pepper, and the cooked sausage. Mix well.

5. Combine Everything

  • In a medium bowl, whisk together eggs and chicken broth.

  • Add bread cubes to the pan with the veggie mixture.

  • Pour egg-broth mixture over everything and gently fold until the bread is evenly moistened.

6. Bake

  • Transfer stuffing mixture into the prepared casserole dish and smooth the top.

  • Cover with aluminum foil and bake at 375˚F for 30 minutes.

  • Uncover, raise temperature to 400˚F, and bake for another 20 minutes until golden and crispy on top.

7. Serve

  • Let the stuffing rest for a few minutes before serving. Sprinkle with extra parsley if desired. Enjoy warm!

  • Make-ahead: Assemble the stuffing up to 1 day ahead. Just bake right before serving.

  • Bread tip: Stale bread is key! It soaks up flavor without becoming mushy.

  • No mushrooms? You can swap in chopped carrots or omit them altogether.
