Ingredients:
- 2 pounds boneless, skinless chicken breasts, diced into 1-inch pieces
- 2 cans (10.75 ounces each) condensed cream of chicken soup
- 1/4 cup milk
- 2 boxes (6 ounces each) Stove Top chicken stuffing mix
- 1 1/2 cups chicken broth
Instructions:
- Preheat oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking dish with non-stick spray.
- Cut chicken breasts into 1-inch pieces and place in the bottom of the prepared baking dish. Season with salt and pepper to taste.
- In a medium bowl, whisk together the condensed cream of chicken soup and milk. Pour the mixture evenly over the chicken.
- Sprinkle the dry stuffing mix evenly over the top of the chicken and soup mixture.
- Pour the chicken broth over the stuffing mix, making sure to get as much of it covered as possible.
- Cover the baking dish with foil and bake for 40-45 minutes, or until the chicken is cooked through.
- Remove the baking dish from the oven and let it stand for 10 minutes before serving.
Tips:
- For a crispier topping, remove the foil during the last 15 minutes of baking.
- If you don't have Stove Top chicken stuffing mix, you can use any other brand of chicken stuffing mix.
- To make this dish ahead of time, assemble the ingredients in the baking dish as directed, but do not bake. Cover the dish with plastic wrap and refrigerate for up to 24 hours. When ready to bake, preheat the oven to 375 degrees F (190 degrees C) and bake for 45-50 minutes, or until the chicken is cooked through.
- Serve this dish with your favorite sides, such as mashed potatoes, roasted vegetables, or a salad.
