Ingredients
Wet Ingredients
- 1 8 ounce block Cream Cheese, softened
- 1/2 cup Unsalted Butter, softened
- 2 tsp Vanilla Extract
- 1 Egg
Dry Ingredients
- 2 cups Almond Flour
- 1/2 cup Keto friendly Sweetener such as Monk Fruit or Erythritol
- 1 tsp Baking Powder
- 1/2 tsp Salt
Instructions
- Preheat the oven to 350°. Line a baking sheet with parchment paper, grease and set aside.
- Add the dry ingredients to a bowl, whisk until well combined.
- In a separate bowl, add the wet ingredients.
- Using a hand mixer, mix until smooth well combined.
- Add the dry ingredients to the wet ingredients and blend until smooth.
- Form 8-12 even sized balls (depending how big you want your cookies) and place them on the greased baking sheet being sure to leave about 2 inches of spaces between them (work in batches if you have to).
- Use a fork to flatten out the tops and round out the edges.
- Bake for 10-12 minutes or until the edges and bottom are cirsped up and golden.
- Allow to completely cool on the baking sheet before attempting to move or touch them.
