Ingredients:
- 4 cups mashed potatoes
- 1/2 cup grated Romano cheese
- 2 large eggs

- Salt and pepper to taste

Instructions:
- In a large bowl, combine mashed potatoes, cheese, eggs, parsley, onion flakes, salt, and pepper.
- Form the mixture into patties and coat them in bread crumbs.
- Heat vegetable oil in a large skillet or pot over medium-high heat.
- Fry the patties in the hot oil until golden brown on both sides.
- Serve immediately.
Editor's Note:
- The amount of oil needed for frying will depend on the size of your skillet or pot.
- To check if the oil is hot enough, drop a bread crumb into the oil. If it sizzles and floats to the top, the oil is ready.
- Be careful not to overcrowd the pan when frying. This will lower the temperature of the oil and make the patties soggy.
- Drain the patties on paper towels after frying to remove any excess oil.
