Potato Croquettes

 

Ingredients:

  • 4 cups mashed potatoes
  • 1/2 cup grated Romano cheese
  • 2 large eggs
  • 2 tablespoons dried parsley
  • 1 teaspoon dried onion flakes
  • Salt and pepper to taste
  • 1 cup Italian-style dried bread crumbs
  • Vegetable oil for deep frying

Instructions:

  1. In a large bowl, combine mashed potatoes, cheese, eggs, parsley, onion flakes, salt, and pepper.
  2. Form the mixture into patties and coat them in bread crumbs.
  3. Heat vegetable oil in a large skillet or pot over medium-high heat.
  4. Fry the patties in the hot oil until golden brown on both sides.
  5. Serve immediately.

Editor's Note:

  • The amount of oil needed for frying will depend on the size of your skillet or pot.
  • To check if the oil is hot enough, drop a bread crumb into the oil. If it sizzles and floats to the top, the oil is ready.
  • Be careful not to overcrowd the pan when frying. This will lower the temperature of the oil and make the patties soggy.
  • Drain the patties on paper towels after frying to remove any excess oil.
