No Bake Cookie Overnight Oats

 

Ingredients:

  • 1/2 cup (40g) old-fashioned rolled oats
  • 1 tablespoon natural peanut butter
  • 1-2 teaspoons pure maple syrup (adjust to taste)
  • 1 teaspoon cacao powder
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon chia seeds
  • 1/2-2/3 cup (122g) plant-based milk (such as cashew milk, adjust for preferred thickness)
  • Pinch of sea salt
  • Optional: mini chocolate chips for topping
  • Optional: warm drizzle of peanut butter for topping

Instructions:

  1. In a small bowl, combine the rolled oats, peanut butter, maple syrup, cacao powder, vanilla extract, chia seeds, plant-based milk, and a pinch of sea salt. Stir well to combine all ingredients.
  2. Cover the bowl or transfer the mixture to another sealable container.
  3. Place in the fridge overnight to allow the oats to soak and soften.
  4. Before serving, give the mixture a good stir.
  5. Optionally, top with mini chocolate chips and a drizzle of warmed peanut butter.
  6. Enjoy your delicious overnight oats!
