- ¼ teaspoon fine sea salt
Wet Ingredients:
- ½ cup unsweetened applesauce
- ⅓ cup honey
- 4 tablespoons oil OR melted butter OR melted coconut oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup shredded zucchini, excess moisture squeezed out (measured after squeezing)
Instructions:
Preheat and Prep:
- Preheat the oven to 360°F (180°C). Line two cookie sheets with parchment paper or silicone baking mats.
Make Cookie Dough:
- In a large bowl, combine all the dry ingredients (quick oats, old fashioned oats, oat flour or chosen flour, ground flax or chia seeds, chopped walnuts, cinnamon, baking powder, and salt). Mix well to combine evenly.
- Add all the wet ingredients (applesauce, honey, oil or melted butter or melted coconut oil, eggs, vanilla extract, and shredded zucchini). Stir together until a uniform cookie dough forms.
Shape and Bake Cookies:
- Using a cookie scoop or spoon, portion out 2 tablespoons of dough per cookie onto the prepared baking sheets, spacing them about 2 inches apart.
- Flatten and shape each portion into rounds that are about ½ – ⅔ inches thick and 2 – 2½ inches in diameter. Note that the cookies will not spread much during baking.
Bake:
- Bake the cookies, one batch at a time, in the preheated oven for 12-14 minutes, or until they are lightly golden around the edges.
Cool and Store:
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
- Once completely cooled, store the cookies in an airtight container at room temperature for up to 3 days.
