Sheet Pan Hot Honey Garlic Chicken and Zucchini

Ingredients:

  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • 2 zucchini, sliced
  • 1/2 cup hot sauce (Frank's RedHot or your favorite)
  • 1/4 cup honey
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Instructions:

  1. Preheat oven: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Season chicken: In a large bowl, combine the chicken, paprika, onion powder, garlic powder, cumin, cayenne pepper, salt, and pepper. Toss to coat.
  3. Coat in flour: Add the flour to the chicken and toss again until evenly coated.
  4. Cook chicken and zucchini: Arrange the chicken and zucchini on the prepared baking sheet. Drizzle with olive oil and toss to coat. Bake for 15-20 minutes, or until the chicken is cooked through and the zucchini is tender.
  5. Make the sauce: In a small saucepan, combine the hot sauce, honey, butter, and garlic. Bring to a simmer over medium heat and cook for 2-3 minutes, or until the sauce is thickened.
  6. Toss and serve: Remove the chicken and zucchini from the oven. Toss the chicken in the hot honey sauce. Serve immediately with your favorite sides, such as rice, quinoa, or roasted vegetables.

Optional additions:

  • For extra flavor: Add a tablespoon of soy sauce or rice vinegar to the sauce.
  • For a tangy kick: Add a tablespoon of lime juice or grated ginger to the sauce.
  • For a sweeter option: Increase the honey to 1/3 cup.
