Ingredients:
- 2 lbs (900 g) chicken breast, cut into 3/4-inch (1.9 cm) pieces
- 1 cup (125 g) Italian-style breadcrumbs
- 3/4 cup (180 ml) mayonnaise
- 1 tsp (5 g) Mrs. Dash seasoning
- 1 tsp (5 g) fine sea salt
- 1/2 tsp (2.5 g) freshly ground black pepper
- Extra light olive oil or canola oil, for frying
- 12 small wooden skewers
Instructions:
- Marinate chicken: In a large mixing bowl, combine chicken pieces, Mrs. Dash seasoning, salt, pepper, and mayonnaise. Marinate in the refrigerator for at least 1 hour or overnight.
- Thread chicken: Thread marinated chicken pieces onto skewers, ensuring the flat sides face in one direction for even cooking.
- Coat in breadcrumbs: Pour breadcrumbs onto a plate and roll chicken skewers in the breadcrumbs until evenly coated.
- Cook chicken: Heat a large nonstick pan over medium heat. Add enough oil to generously cover the bottom. Saute chicken skewers for about 3 minutes per side, or until golden brown and cooked through (internal temperature reaches 165°F/74°C).
- Drain and serve: Transfer cooked skewers to a paper towel-lined platter to drain excess oil. Serve immediately.
