Fried Cabbage with Kielbasa


Ingredients

  • 4 strips thick-cut bacon, cut into lardons
  • 1 tbsp vegetable oil
  • 1 lb kielbasa, sliced
  • 1 yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 1 small head green cabbage, cored and roughly chopped
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • ½ tsp ground cumin
  • 1 tbsp tomato paste
  • 1 cup low-sodium chicken broth

Instructions

  1. Prep Ingredients:

    • Cut bacon into lardons and slice the kielbasa.
    • Finely chop the onion and mince the garlic.
    • Core and roughly chop the cabbage.
  2. Cook Bacon:

    • Heat a large skillet over medium-high heat.
    • Add the bacon and cook until golden brown. Remove from skillet and set aside.
  3. Cook Kielbasa:

    • In the same skillet, add vegetable oil and sliced kielbasa. Cook until browned, about 5 minutes. Remove from skillet and set aside.
  4. Cook Vegetables:

    • Reduce heat to medium and add the chopped onion and minced garlic to the skillet. Cook for 1 minute.
    • Add the chopped cabbage and cook for 3 minutes, stirring occasionally.
  5. Season & Simmer:

    • Stir in salt, black pepper, smoked paprika, ground cumin, and tomato paste.
    • Pour in the chicken broth, cover the skillet, and reduce heat to low. Simmer for 15 minutes until the cabbage is tender-crisp.
  6. Finish & Serve:

    • Uncover the skillet and return the cooked kielbasa and bacon to the pan. Stir well and simmer uncovered for an additional 5 minutes.
    • Serve hot and enjoy!
