No Bake Chocolate Cherry Energy Bites

Ingredients:

  • 1 cup cashew butter
  • 1/4 cup maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 1 cup old-fashioned oats
  • 3 tablespoons chia seeds
  • 2 tablespoons ground flaxseed
  • 1/2 cup shredded coconut
  • 1/2 cup dried cherries
  • 1/4 teaspoon sea salt
  • 3/4 cup mini dark chocolate chips
  • Flaky sea salt for topping (optional)
  • 1/4 cup chopped nuts (almonds, walnuts, or pecans)
  • 1 tablespoon cacao powder (optional)

Instructions:

  1. Combine dry ingredients: In a food processor, combine oats, flaxseed, coconut, chia seeds, and sea salt. Pulse until combined.
  2. Add wet ingredients: Add cashew butter, maple syrup, vanilla extract, and chocolate chips. Pulse until a dough forms.
  3. Fold in add-ins: Fold in chopped nuts and cacao powder (if using).
  4. Chill: Chill dough in the refrigerator for 15-20 minutes.
  5. Form balls: Scoop dough into balls and roll in your hands.
  6. Chill: Place balls on a parchment-lined baking sheet and chill for 15-20 minutes.
  7. Optional topping: Sprinkle with flaky sea salt before serving.

  • For a tangy flavor: Add a squeeze of lemon or lime juice.
  • For a fruity flavor: Add dried cranberries, blueberries, or raspberries.
