Rotisserie Chicken Salad


Ingredients:

  • 3 cups cooked and diced rotisserie chicken
  • 1 medium pink lady or honeycrisp apple, diced
  • 1/2 cup diced celery
  • 1/4 cup finely minced red onion
  • 1/2 cup dried cranberries
  • 1/2 cup pumpkin seeds
  • 1/4 cup chopped dill
  • 1/4 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper, plus more to taste
  • 1/4 teaspoon garlic powder
  • 1 tablespoon lemon juice
  • 1/4 cup chopped walnuts or pecans (optional)
  • 1/4 cup crumbled feta cheese (optional)
  • 1 tablespoon honey (optional)

Instructions:

  1. Combine ingredients: In a large mixing bowl, combine chicken breast, apple, celery, red onion, dried cranberries, pumpkin seeds, dill, mayonnaise, Greek yogurt, Dijon mustard, salt, pepper, garlic powder, and lemon juice.
  2. Stir: Stir until well combined.
  3. Add optional ingredients: Add chopped walnuts or pecans, crumbled feta cheese, and honey (if desired).
  4. Serve: Serve immediately or chill until ready to serve.

Optional additions:

  • For extra flavor: Add a pinch of red pepper flakes or cayenne pepper.
  • For a smoky flavor: Add a teaspoon of smoked paprika.
  • For a tangy kick: Add a tablespoon of lemon juice or orange zest.
