Honey Chipotle Salmon Bowls


Ingredients:

  • 1.5 pounds salmon filet, skin removed and cut into 1-inch cubes
For the salmon marinade:
  • Zest and juice of 1 lime
  • 1 teaspoon salt
  • 1/2 teaspoon chipotle powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons honey
  • 2 tablespoons avocado oil
For the spicy chipotle mayo:
  • 1/2 cup mayonnaise
  • 2 chipotle peppers in adobo
  • 2 cloves garlic, minced or crushed
  • Juice and zest of 1 lime
  • Generous pinch of salt
  • 1 tablespoon finely chopped cilantro
For the bowls:
  • Cilantro lime rice
  • Avocado-cucumber-peach salsa
  • Chopped butter lettuce

Instructions:

  1. Marinate salmon: Whisk together marinade ingredients in a bowl. Add salmon and marinate for at least 30 minutes.
  2. Make chipotle mayo: Blend chipotle mayo ingredients, except cilantro. Add cilantro and pulse.
  3. Cook salmon: Heat skillet over medium-high heat. Add avocado oil and salmon. Cook for 3-4 minutes per side.
  4. Assemble bowls: Start with rice and chopped butter lettuce. Add salmon, salsa, and chipotle mayo.

Optional additions:

  • For extra heat: Add more chipotle peppers or a pinch of red pepper flakes to the marinade or mayo.
  • For a smoky flavor: Add a teaspoon of smoked paprika to the marinade.
  • For a tangy kick: Add a tablespoon of lemon juice or orange zest to the salsa.
  • For additional vegetables: Add chopped bell peppers, red onion, or corn to the salsa.
