Watercress Salad Recipe


Ingredients:

For the dressing:
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard (optional)
  • 3 teaspoons honey
  • 2 teaspoons chopped fresh thyme
  • Salt and pepper to taste
For the salad:
  • 4 cups watercress
  • 1 1/2 cups thinly sliced apples
  • 1 cup thinly sliced celery
  • 1/4 cup thinly sliced red onions
  • 1/4 cup chopped walnuts
  • 1/4 cup crumbled goat cheese (optional)
  • 1 tablespoon toasted sesame seeds (optional)

Instructions:

  1. Make dressing: In a small bowl, whisk together olive oil, lemon juice, Dijon mustard (if using), honey, thyme, salt, and pepper.
  2. Assemble salad: In a large bowl, combine watercress, apples, celery, red onions, walnuts, goat cheese (if using), and toasted sesame seeds (if using).
  3. Toss and serve: Drizzle with dressing and toss to coat. Serve immediately.

Optional additions:

  • For extra flavor: Add a pinch of red pepper flakes or cayenne pepper to the dressing.
  • For a tangy kick: Add a tablespoon of apple cider vinegar to the dressing.
  • For a crunchier texture: Add chopped almonds or sunflower seeds.
  • For a sweeter taste: Increase the amount of honey in the dressing.
