Mediterranean Tzatziki Chicken Salad


Ingredients:

For the Tzatziki:

  • 1 cup plus 2 Tbsp plain Greek yogurt
  • ½ cucumber, grated
  • 2 to 3 garlic cloves, pressed
  • 2 Tbsp olive oil
  • 2 Tbsp fresh dill, chopped
  • Salt and pepper to taste

For the Salad:

  • 2 cups chopped romaine lettuce
  • 1 cup halved grape tomatoes
  • ½ cup sliced pepperoncini peppers
  • ½ cup sliced Kalamata olives
  • ¼ cup chopped red onion
  • 2 cups chopped cooked chicken
  • ½ cup crumbled feta cheese

Instructions:

  1. Make the Tzatziki: In a bowl, combine Greek yogurt, cucumber, garlic, olive oil, dill, salt, and pepper. Stir until smooth and creamy.
  2. Assemble the Salad: In a large salad bowl, toss together romaine lettuce, tomatoes, pepperoncini, olives, and red onion.
  3. Add Chicken: Layer the chopped cooked chicken over the salad base.
  4. Dress with Tzatziki: Dollop the tzatziki sauce over the salad and chicken.
  5. Garnish: Sprinkle crumbled feta cheese on top.
