Sheet Pan Pork Tenderloin with Potato Wedges and Vegetables



Ingredients:

For the seasoning:

  • 2 cloves garlic, crushed
  • 2 teaspoons sweet paprika
  • 1 teaspoon coarsely ground black pepper
  • 1 teaspoon onion powder
  • 1/2 teaspoon each of dried basil, oregano, and thyme
  • Pinch of red chili flakes

For the sheet pan meal:

  • 500 grams (17 ounces) pork tenderloin (fillet)
  • 2 cloves garlic, crushed
  • 4 teaspoons maple syrup
  • 800 grams (28 ounces) Yukon Golden potatoes, sliced into wedges
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • 1/2 large head broccoli, broken into florets
  • 1/2 large head cauliflower, broken into florets
  • 1 tablespoon olive oil
  • Olive oil spray
  • Salt and pepper
  • 40 grams (1.4 ounces) finely grated Parmesan cheese
Optional additions:
  • 1/4 cup balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 cup chopped fresh rosemary

Instructions:

  1. Preheat oven: Preheat oven to 200°C (400°F).
  2. Make seasoning mix: In a bowl, combine garlic, paprika, black pepper, onion powder, basil, oregano, and thyme.
  3. Season pork: Season pork tenderloin with seasoning mix. Cover and set aside.
  4. Prepare vegetables: Toss potato wedges with garlic powder, parsley, olive oil, and salt and pepper.
  5. Assemble on baking sheet: Line a baking sheet with parchment paper. Add potato wedges.
  6. Bake potatoes: Bake for 15 minutes.
  7. Add pork and vegetables: Push potato wedges aside to make space. Add cauliflower, broccoli, and seasoned pork tenderloin. Drizzle with olive oil and season with salt and pepper.
  8. Bake with pork: Bake for 15 minutes.
  9. Flip pork and add maple syrup: Remove tray, flip pork, and brush with maple syrup. Toss vegetables. Spray with olive oil.
  10. Finish baking: Bake for another 15 minutes, or until pork and vegetables are cooked through.
  11. Serve: Sprinkle with Parmesan cheese. Let pork rest for 5-10 minutes before slicing. Serve and enjoy!

Optional additions:

  • For extra flavor: Add a drizzle of balsamic vinegar and Dijon mustard to the vegetables before baking.
  • For a crunchier texture: Add chopped almonds or walnuts to the vegetables.
  • For a spicier kick: Add a pinch of cayenne pepper or red pepper flakes to the seasoning mix.
