English Muffin Breakfast Pizza


Ingredients:

  • 1 package English muffins
  • 8 eggs
  • 1 pound breakfast sausage
  • 8 ounces mild cheddar cheese, sliced
  • 1/4 cup milk (for scrambled eggs)
  • 1/4 cup all-purpose flour
  • 1/4 cup butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional toppings: red pepper flakes, chopped green onions

Instructions:

  1. Cook sausage: Cook sausage in a skillet until browned and cooked through. Drain off excess grease.
  2. Make sawmill gravy: In the same skillet, melt butter over medium heat. Whisk in flour until combined. Gradually whisk in milk, salt, and pepper, stirring constantly until the gravy thickens.
  3. Scramble eggs: Whisk eggs with milk in a bowl. Heat a skillet over medium heat and cook the eggs, stirring occasionally, until set.
  4. Assemble pizzas: Split English muffins in half. Spread a layer of sawmill gravy on each half. Top with scrambled eggs, sausage, and cheese.
  5. Broil: Broil on high for 2-3 minutes, or until cheese is melted and bubbly.
  6. Serve: Serve immediately, garnished with red pepper flakes and green onions, if desired.

Optional Additions:

  • For extra flavor: Add sautéed mushrooms, onions, or peppers to the sausage.
  • For a spicier kick: Add a pinch of cayenne pepper to the sausage or gravy.
  • For a richer flavor: Use a combination of cheddar and Gruyère cheese.
