Meatball Subs


Ingredients:

  • 2 lbs ground beef (80/20 blend)
  • 1 sleeve crushed saltine crackers
  • 2 eggs, room temperature
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon dried oregano
  • 1 medium yellow onion, minced  
  • 2 green peppers, roughly chopped
  • 1 red pepper, roughly chopped
  • 1 pint cherry or grape tomatoes
  • 1 medium yellow onion, roughly chopped
  • 1 jar spaghetti sauce
  • 2 tablespoons sugar
  • Fresh oregano (optional)
  • French bread rolls
  • Toppings of your choice (e.g., hot pepper rings, mini fresh mozzarella balls)

Instructions:

  1. Prepare Meatballs:

    • In a large bowl, combine ground beef, crushed saltines, eggs, salt, pepper, garlic powder, onion powder, and oregano. Mix well.
    • Form mixture into 2-inch meatballs.
    • Let meatballs rest at room temperature for 20 minutes.
  2. Sauté Vegetables:

    • In a large skillet or pot, heat oil or butter. Add chopped onions, green peppers, and red pepper. Sauté until softened.
    • Add cherry or grape tomatoes and cook until they begin to burst. Remove from heat and set aside.
  3. Brown Meatballs:

    • In the same skillet, brown meatballs on all sides. Remove and set aside.
  4. Make the Sauce:

    • In the same skillet, add spaghetti sauce, water, sugar, and fresh oregano (if using). Bring to a simmer.
    • Return meatballs to the sauce, cover, and simmer for 90 minutes or until meatballs are cooked through.
  5. Assemble Subs:

    • Toast French bread rolls.
    • Top with meatballs, sauce, vegetables, and desired toppings.
