- 1 red pepper, roughly chopped
- 1 pint cherry or grape tomatoes
- 1 medium yellow onion, roughly chopped
- 1 jar spaghetti sauce
- 2 tablespoons sugar
- Fresh oregano (optional)
- French bread rolls
- Toppings of your choice (e.g., hot pepper rings, mini fresh mozzarella balls)
Instructions:

Prepare Meatballs:
- In a large bowl, combine ground beef, crushed saltines, eggs, salt, pepper, garlic powder, onion powder, and oregano. Mix well.
- Form mixture into 2-inch meatballs.
- Let meatballs rest at room temperature for 20 minutes.

Sauté Vegetables:
- In a large skillet or pot, heat oil or butter. Add chopped onions, green peppers, and red pepper. Sauté until softened.
- Add cherry or grape tomatoes and cook until they begin to burst. Remove from heat and set aside.

Brown Meatballs:
- In the same skillet, brown meatballs on all sides. Remove and set aside.

Make the Sauce:
- In the same skillet, add spaghetti sauce, water, sugar, and fresh oregano (if using). Bring to a simmer.
- Return meatballs to the sauce, cover, and simmer for 90 minutes or until meatballs are cooked through.

- Toast French bread rolls.
- Top with meatballs, sauce, vegetables, and desired toppings.
