Easy Flaxseed Pudding


Ingredients:

  • 1 cup ground flaxseed (flaxseed meal)
  • 1 ⅔ cups unsweetened plant milk (such as almond, oat, coconut, or soy)
  • 1 ½ - 2 tablespoons maple syrup (or sweetener of choice)
  • 1 teaspoon vanilla extract
  • A pinch of salt (optional)

Instructions:

  1. Mix Ingredients: In a bowl or jar, combine the ground flaxseed, plant milk, maple syrup, vanilla, and salt (if using). Stir well to combine.

  2. Chill: Cover the mixture with a lid or plastic wrap and let it sit in the fridge for at least 1 hour or overnight to thicken. The longer it sits, the thicker it becomes.

  3. Serve: If desired, divide the pudding into small jars or containers. Top with fresh or dried fruit, nuts, or any other toppings of your choice before serving.

Notes:

  • Consistency: If you prefer a thicker pudding, use 1.5 cups of milk instead of 1 and ⅔ cups. For a thinner, more porridge-like consistency, use up to 2 cups of milk.
  • Sweeteners: You can adjust the sweetness to your taste. Feel free to use honey, coconut sugar, or a sweetener of your choice. For a Whole30-friendly option, use a small mashed banana instead of maple syrup.
  • Storage: To keep ground flaxseed fresh, store it in an airtight container in the fridge or freezer. You can also grind flaxseeds fresh in a spice grinder or coffee grinder.
