Banana Nut Muffins


Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour (or 1 1/2 cups all-purpose flour if preferred)
  • 1 1/2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon cinnamon
  • 1 stick salted butter (1/2 cup), melted
  • 3 large ripe bananas, mashed
  • 1/2 cup sugar
  • 1/4 cup dark brown sugar, packed
  • 1/4 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup to 1 cup walnuts (toasted if desired)

Instructions:

  1. Preheat the oven to 350°F.
  2. In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, salt, nutmeg, and cinnamon. Set aside.
  3. Melt the butter and set it aside to cool slightly.
  4. In a separate mixing bowl, mash the bananas with a fork. Then, stir in the melted butter, both sugars, milk, egg, and vanilla extract. Mix well.
  5. Combine the wet ingredients with the dry ingredients, stirring until just combined (do not overmix).
  6. Fold in half the walnuts.
  7. Spoon the batter evenly into 12 greased or paper-lined muffin cups.
  8. Sprinkle the remaining walnuts over the tops of the muffins.
  9. Bake for 22-26 minutes or until golden brown and a toothpick inserted comes out clean.
  10. Let the muffins rest in the pan on a wire rack for 5 minutes, then remove from the pan and cool completely.
