Ingredients:
- 1 cup all-purpose flour
- 1/2 cup whole wheat flour (or 1 1/2 cups all-purpose flour if preferred)
- 1 1/2 teaspoons baking soda
- 1/4 teaspoon salt
- 1/8 teaspoon nutmeg
- 1/8 teaspoon cinnamon
- 1 stick salted butter (1/2 cup), melted
- 3 large ripe bananas, mashed
- 1/2 cup sugar
- 1/4 cup dark brown sugar, packed
- 1/4 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 3/4 cup to 1 cup walnuts (toasted if desired)
Instructions:
- Preheat the oven to 350°F.
- In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, salt, nutmeg, and cinnamon. Set aside.
- Melt the butter and set it aside to cool slightly.
- In a separate mixing bowl, mash the bananas with a fork. Then, stir in the melted butter, both sugars, milk, egg, and vanilla extract. Mix well.
- Combine the wet ingredients with the dry ingredients, stirring until just combined (do not overmix).
- Fold in half the walnuts.
- Spoon the batter evenly into 12 greased or paper-lined muffin cups.
- Sprinkle the remaining walnuts over the tops of the muffins.
- Bake for 22-26 minutes or until golden brown and a toothpick inserted comes out clean.
- Let the muffins rest in the pan on a wire rack for 5 minutes, then remove from the pan and cool completely.
