Oven-Baked Crispy Black Bean Tacos


Ingredients (Servings: 4)

For the Black Bean Tacos:

  • 1 tbsp Olive Oil
  • 1/2 Yellow Onion (finely chopped) or 4 Shallots
  • 3 Garlic Cloves (minced)
  • 1-2 Jalapeños (chopped and de-seeded)
  • 2 tbsp Tomato Paste
  • 2 (14-oz) cans Black Beans (drained)
  • 1 tbsp Taco Seasoning
  • Juice of 1 Lime
  • 6 large Corn Tortillas

For the Cilantro Yogurt Sauce:

  • 1/2 cup Plain Greek Yogurt
  • 1 bunch Cilantro
  • Juice of 1-2 Limes
  • 1 tsp Olive Oil
  • 1/4 tsp Paprika
  • Salt & Black Pepper (to taste)

Instructions:

For the Black Bean Tacos:

  1. Preheat the Oven:

    • Preheat your oven to 450°F and line a baking sheet with parchment paper.
  2. Sauté the Vegetables:

    • In a skillet over medium-high heat, add 1 tbsp olive oil and heat for 1 minute.
    • Add the minced garlic, chopped shallots (or yellow onion), and jalapeños. Sauté for 1 minute until fragrant.
  3. Cook the Black Beans:

    • Add the drained black beans and tomato paste to the skillet, stirring to combine.
    • Add 1 cup of water and stir well. Bring to a boil and reduce the heat to a simmer.
    • Using a fork, lightly smash the black beans to create a thicker texture. Add more water if needed to keep the beans moist but not watery.
  4. Season the Beans:

    • Stir in the taco seasoning, lime juice, and salt and black pepper to taste. Let it simmer for a few minutes.
  5. Prepare the Tortillas:

    • Spread the black bean mixture evenly across the tortillas.
    • Place the tortillas on the prepared baking sheet.
    • Brush each tortilla with olive oil.
  6. Bake the Tacos:

    • Bake the tortillas in the preheated oven for 8-10 minutes until they are lightly golden brown.
    • Flip the tortillas over and bake for another 8-10 minutes.
    • Serve warm!

For the Cilantro Yogurt Sauce:

  1. Blend the Sauce:

    • In a food processor or high-speed blender, combine the plain Greek yogurt, cilantro, lime juice, olive oil, paprika, salt, and black pepper.
    • Blend until smooth and creamy.
  2. Store and Serve:

    • Serve the cilantro yogurt sauce immediately, or store it in an airtight container in the fridge for up to 4 days.
