Burrata & Caramelized Onion Steak Crostini


Ingredients (Serves about 12 crostini):

  • 1 large Yellow Onion (thinly sliced)
  • 2 4.4-oz BUF Creamery Grass-Fed Burrata
  • 1/3 cup Olive Oil
  • 1 Lemon
  • 1 Artisanal Baguette (sliced into ½” pieces)
  • 2 whole Garlic Cloves
  • 1 lb Sirloin or New York Strip Steak
  • 3 tbsp Butter
  • 2 sprigs Fresh Rosemary
  • Salt & Black Pepper
  • Fresh Chives (chopped, for garnishing)

Instructions:

1. Preparing the Ingredients:

  • Let the steak and burrata sit at room temperature for 20-25 minutes before cooking. This ensures even cooking of the steak and allows the burrata to soften.

2. Make the Caramelized Onions:

  • In a skillet, melt 2 tbsp butter over medium-high heat.
  • Add the thinly sliced onions, cover with a lid, and cook for 8 minutes.
  • Stir the onions every so often to prevent burning. After 8 minutes, add ¼ cup of water to the skillet and continue cooking for 10-15 minutes until the onions are deeply caramelized and golden brown. Stir occasionally.

3. Make the Crostini:

  • Preheat the oven to BROIL.
  • Slice the baguette into ½” slices and place them on a parchment paper-lined sheet pan.
  • Drizzle generously with olive oil.
  • Broil for 1-2 minutes, then flip the bread slices and broil for another 1-2 minutes until golden and crispy.

4. Cook the Steak:

  • Preheat your oven to 400°F.
  • Heat a cast iron skillet over medium-high heat for about 2-3 minutes, until very hot.
  • Season the steak generously with salt and black pepper.
  • Add 1 tbsp olive oil into the hot skillet, then add the steak.
  • Sear the steak for 2-3 minutes on one side, without moving it.
  • Flip the steak and sear the other side for 1-2 minutes. Add 3 tbsp butter and 2 sprigs fresh rosemary. Cook for another 1 minute, basting the steak with the melted butter.
  • Carefully transfer the skillet into the preheated oven and cook the steak for 3-4 minutes (for medium-rare) or until your desired doneness.
  • Remove the steak from the skillet and let it rest for at least 5 minutes before thinly slicing against the grain.

5. Make the Burrata:

  • While the steak is cooking, in a small bowl, combine the burrata, 1 tbsp olive oil, and the zest of 1 lemon.
  • Season with salt and black pepper to taste, and set aside.

6. Assemble the Crostini:

  • Once the crostini have cooled slightly, rub them with the whole garlic cloves to infuse a light garlic flavor.
  • Layer each crostini with a dollop of the burrata mixture, followed by a thin slice of the cooked steak.
  • Add a spoonful of the caramelized onions and garnish with freshly chopped chives.

Serve:

  • Enjoy these crostini warm as an appetizer or party snack. They offer an incredible balance of flavors from the creamy burrata, juicy steak, rich caramelized onions, and crunchy crostini.

Tips:

  • You can use any type of cheese, like goat cheese or ricotta, if burrata isn't available.
  • For a little extra flavor, consider drizzling the crostini with a balsamic glaze or adding a few pickled onions for a tangy twist.
