Crispy Tuna Egg Rolls


Ingredients (Serves 6-8):

  • 1 tbsp Olive Oil
  • 2 Shallots (chopped)
  • 1 Napa Cabbage (chopped)
  • 2-3 Garlic Cloves (minced)
  • 1 inch Fresh Ginger (grated or minced)
  • 2-3 cans (5 oz) Wild Planet Tuna of Choice (drained)
  • ¼ cup Fresh Cilantro (chopped)
  • 1 tbsp Soy Sauce
  • 1 tsp Paprika
  • 10-12 Egg Roll Wrappers
  • Salt & Black Pepper (to taste)
  • Frying Oil (for deep frying)
  • Spicy Mayo (for serving)

Instructions:

1. Prepare the Filling:

  • In a large skillet over medium-high heat, add olive oil and heat for about 1 minute.
  • Add the shallots, chopped napa cabbage, garlic, and fresh ginger. Sauté for 6-8 minutes, stirring occasionally, until the cabbage is cooked down and tender.
  • Drain the Wild Planet tuna cans and add the tuna to the sautéed vegetables in the skillet.
  • Stir in chopped cilantro, soy sauce, and paprika. Cook for another 2-3 minutes, allowing the flavors to combine and the mixture to become fragrant.
  • Season with salt and black pepper to taste. Once the mixture is well combined, remove it from the heat and set aside to cool until it's safe to handle.

2. Assemble the Egg Rolls:

  • Lay out the egg roll wrappers on a clean surface.
  • Brush the edges of each wrapper lightly with water to help seal the rolls.
  • Place about 2-3 tablespoons of the tuna-cabbage mixture in the center of each wrapper.
  • Fold in the sides and then roll tightly like a burrito, ensuring the edges are sealed well.

3. Fry the Egg Rolls:

  • Heat frying oil in a large pot or wok to 400°F (200°C). You’ll want enough oil to submerge the egg rolls so they can fry evenly.
  • Carefully place the egg rolls into the hot oil, frying for about 2-3 minutes on each side until golden brown and crispy.
  • Use tongs or a slotted spoon to remove the egg rolls from the oil and place them on a paper towel-lined wire rack to drain any excess oil.

4. Serve and Enjoy:

  • Serve the egg rolls warm with a side of spicy mayo for dipping. The creamy mayo with a hint of spice will complement the crispy egg rolls perfectly.
