
Ingredients (Serves 4):
For the Shrimp:
- 1 lb Shrimp (peeled and deveined, thawed)
- 2 tbsp Olive Oil
- 2 tsp Sweet Paprika
- 1/2 tsp Ground Ginger (or 1 tbsp Grated Fresh Ginger)
- 1/2 tsp EACH: Salt & Black Pepper
For the Dressing:
- 1/4 cup Lime Juice (about 2 limes)
- 2 tbsp Olive Oil
- 2 tbsp Rice Vinegar
- 2 tbsp Maple Syrup or Honey
- 2 tbsp Natural Peanut Butter
- 2 Garlic Cloves (finely minced or grated, or 1/2 tsp Garlic Granules)
- 1 tsp Red Pepper Flakes
For the Salad:
- 1 large Romaine Head (finely chopped)
- 1/2 Red Cabbage (finely chopped)
- 1 cup Thin Rice Noodles (cooked and loosely chopped)
- 1 ripe Avocado (chopped)
- 1 large English Cucumber (thinly sliced)
- 1-2 large Carrots (thinly sliced)
- 1/3 cup Fresh Cilantro (chopped)
- (Optional) 1 ripe Mango (chopped)
Instructions:
1. Make the Dressing:
- In a mason jar (or a bowl), combine the lime juice, olive oil, rice vinegar, maple syrup or honey, peanut butter, minced garlic, and red pepper flakes.
- Seal the mason jar and shake well until all ingredients are thoroughly combined (or whisk in the bowl).
- Taste and season with salt and black pepper to your preference. Set aside.
2. Cook the Shrimp:
- Heat 2 tbsp olive oil in a skillet over medium-high heat.
- Toss the shrimp with sweet paprika, ground ginger, salt, and black pepper to coat them evenly.
- Arrange the shrimp in a single layer in the hot skillet.
- Cook the shrimp for 2 minutes (for medium shrimp), 3 minutes (for large shrimp), or 4 minutes (for jumbo shrimp) on one side without moving them, to get a nice sear.
- Flip the shrimp and cook for 1-2 more minutes, until they are cooked through and opaque. Remove from heat.
3. Make the Salad:
- In a large bowl, combine the chopped romaine, chopped red cabbage, cooked rice noodles, chopped avocado, thinly sliced cucumber, thinly sliced carrots, chopped cilantro, and optional chopped mango.
- Toss the ingredients well to mix them evenly.
4. Assemble the Salad:
- Add the cooked shrimp to the salad and gently toss to combine.
- Drizzle the peanut lime dressing over the top and toss again to evenly coat the salad with the dressing.
