Chicken Tenders

  • 2 lbs boneless chicken tenders 🍗
  • 2 tbsp + ¾ cup brown rice flour 🌾
  • 1 tsp garlic powder 🧄
  • 1 tsp onion powder 🧅
  • Flaked sea salt & black pepper, to taste 🧂
  • ¾ - 1 cup buttermilk 🥛

Crispy Coconut Coating

  • ¼ - ½ cup finely shredded unsweetened coconut 🥥
  • 1 tsp smoked paprika 🌶️
  • ½ - 1 tsp ground turmeric (adjust to taste) ✨
  • 2 tsp lime zest 🍋
  • Extra virgin olive oil, for brushing/drizzling

🔥 Spicy Buffalo Sauce

  • ½ cup mayo
  • ¼ cup buffalo sauce 🌶️
  • 1 tbsp ketchup 🍅
  • ½ tsp garlic powder 🧄

1️⃣ Prep & Preheat

  1. Preheat oven to 450°F (230°C).
  2. Line a baking sheet with parchment paper or grease with olive oil.

2️⃣ Season the Chicken

  1. In a large bowl, combine:
    • 2 tbsp brown rice flour
    • Garlic powder, onion powder, salt, and black pepper
  2. Toss the chicken tenders in the mixture until well coated.

3️⃣ Make the Batter

  1. In a separate bowl, mix together:
    • ¾ cup brown rice flour
    • Shredded coconut, smoked paprika, turmeric, and lime zest
  2. Pour in ¾ cup buttermilk, stirring until a thick batter forms.
    • Add extra buttermilk (if needed) to loosen the batter slightly.

4️⃣ Coat & Bake the Chicken

  1. Add chicken tenders to the batter, ensuring each piece is fully coated.
  2. Place the coated tenders on the prepared baking sheet, spacing them apart.
  3. Drizzle with olive oil and bake for 10 minutes.
  4. Remove from the oven and spoon any leftover batter onto the tenders.
  5. Drizzle with more olive oil and bake for another 15 minutes, or until crispy.
  6. Sprinkle with flaked sea salt while hot.

  1. In a small bowl, whisk together:
  • Mayo, buffalo sauce, ketchup, and garlic powder
  1. Adjust seasoning to taste.
