Keto Ham and Cheese Quiche

Ingredients:

  • 5 eggs
  • 8 oz ham steak, chopped
  • 1 cup shredded Swiss cheese
  • 1/3 cup shredded cheddar cheese
  • 1/4 cup heavy cream
  • 2/3 cup unsweetened almond milk
  • 3 green onions, chopped

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Spray the pie shell with nonstick spray.
  3. Sprinkle Swiss and cheddar cheeses evenly on the bottom of the pie shell (reserve a little for topping).
  4. Add chopped green onions and ham over the cheese.
  5. In a separate bowl, whisk together the eggs, almond milk, heavy cream, and a pinch of salt and pepper.
  6. Pour the egg mixture into the pie shell, over the ham and cheese. Top with the reserved cheese.
  7. Place the quiche on a baking sheet and bake for about 40-45 minutes, or until set and lightly browned on top.
  8. Remove from the oven and let cool slightly before slicing.

Recipe Notes:

  • If the top of the quiche starts to brown too quickly, cover it loosely with foil and continue baking until fully cooked.
