Rhubarb Dump Cake Recipe

Ingredients:

  • 4 cups fresh rhubarb, diced
  • 1 cup granulated sugar
  • 1 box yellow cake mix (around 15.25 oz)
  • 1 cup water
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon ground cinnamon (optional, for a warm spice twist)
  • 1/4 teaspoon salt

Instructions:

  1. Preheat the oven: Set your oven to 350°F (175°C). Grease a 9×13-inch baking dish to prevent sticking.

  2. Layer the rhubarb: Evenly spread the diced rhubarb across the bottom of the prepared baking dish.

  3. Add sugar: Sprinkle the granulated sugar evenly over the rhubarb.

  4. Add the cake mix: Pour the dry yellow cake mix directly over the rhubarb and sugar layer. Spread it out evenly with a spoon or spatula.

  5. Drizzle water: Pour the water evenly over the cake mix. It might look uneven, but that's part of the "dump cake" magic!

  6. Add butter: Evenly drizzle the melted butter over the entire cake mix layer.

  7. Optional spices: Sprinkle ground cinnamon over the top if you like a warm, spiced touch. A pinch of salt will help balance the sweetness.

  8. Bake: Place the dish in the preheated oven and bake for 40–45 minutes, or until the top is golden brown and slightly crisp. The rhubarb filling should be bubbly.

  9. Cool slightly: Let the cake cool for a few minutes before serving, though it's delicious when warm!
