Croissant Breakfast Sandwich

Ingredients:

  • 2 large croissants
  • 4 large eggs
  • 1/4 cup milk
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp unsalted butter
  • 2 slices cheddar cheese
  • 4 slices cooked bacon
  • 1/2 avocado (sliced, optional)

Instructions:

  1. In a bowl, whisk together eggs, milk, salt, and pepper.
  2. Melt butter in a non-stick skillet over medium heat. Pour in the egg mixture and cook, stirring gently, until scrambled and fully cooked. Set aside.
  3. Cut croissants in half horizontally and toast lightly in the skillet until golden brown.
  4. On the bottom half of each croissant, add a slice of cheddar cheese. Top with scrambled eggs, 2 slices of bacon per sandwich, and extra cheese if desired.
  5. Add avocado slices for extra creaminess (optional).
  6. Close the sandwiches and serve immediately.
