Cheesy Protein Egg Bake


Ingredients

  • 6 large eggs
  • 2 cups cottage cheese
  • 1 cup shredded cheese (your choice)
  • 1 cup chopped spinach
  • ½ cup diced bell pepper
  • ½ cup chopped onion
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh herbs for garnish (optional)
  • Sliced tomatoes or avocado for garnish (optional)

Instructions

Preheat the Oven:

  1. Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking dish.

Prepare the Egg Mixture:

  1. Whisk the eggs in a large bowl.
  2. Stir in the cottage cheese until fully incorporated.
  3. Mix in the chopped spinach, bell pepper, onion, garlic powder, onion powder, salt, and black pepper until combined.

Add the Cheese:

  1. Fold in the shredded cheese, saving some to sprinkle on top if desired.

Bake:

  1. Pour the mixture into the prepared dish. Top with the reserved cheese.
  2. Bake for 40-45 minutes, or until the egg bake is set and golden.

Cool and Serve:

  1. Let the dish cool for 5 minutes before slicing.
  2. Garnish with fresh herbs, tomatoes, or avocado if desired.

Notes:

  • You can use low-fat or full-fat cottage cheese depending on your preference.
  • This dish is great for meal prep, and it stores well in the fridge for a few days.
  • You can customize the vegetables, adding or substituting according to your taste (e.g., mushrooms, zucchini, etc.).
