Slow Cooker Peach Pork

Ingredients:

  • 4 lb pork loin (not tenderloin)
  • 1 (15 oz) can peaches (drained, reserving the syrup)
  • 1 cup tomato sauce

Pork Rub Mixture:

  • 1 tbsp minced garlic
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cinnamon
  • 1/2 tsp paprika
  • 1/2 tsp ground thyme
  • 1/3 cup brown sugar
  • 1/3 cup canola oil

Instructions:

  1. Make the Pork Rub:

    • In a small bowl, combine minced garlic, salt, black pepper, cinnamon, paprika, thyme, brown sugar, and canola oil. Mix well.
  2. Prepare the Pork:

    • Rub the mixture all over the pork loin using your hands, ensuring the pork is fully coated with the seasoning.
  3. Slow Cooker:

    • In the slow cooker, add tomato sauce and the reserved peach syrup from the can. Stir to combine.
    • Place the seasoned pork loin into the slow cooker.
    • Top the pork with the drained peaches.
  4. Cook:

    • Cover and cook on low for 5-6 hours. If you prefer to shred the pork, cook it for 8 hours until tender and easily pulled apart.
  5. Serve:

    • Once cooked, you can carve the pork into slices or shred it and mix it with the peach sauce.
    • Serve the pork with the slow-cooked peaches and sauce on the side.
