Chicken and Mushroom Pastry


🥐 Chicken and Mushroom Puff Pastry Shells


📝 Ingredients

  • 1 tbsp olive oil

  • 1 cup shredded cooked chicken

  • 4 oz mushrooms, chopped

  • 2 tbsp mayonnaise

  • 1/4 tsp salt

  • 1/8 tsp black pepper

  • 1 cup shredded mozzarella

  • 1 garlic clove, minced or grated

  • 2 packages puff pastry shells (thawed)

  • 1 tbsp fresh dill, chopped

  • 1 egg, whisked + 1 tbsp water (for egg wash)


👩‍🍳 Instructions

  1. Sauté Mushrooms:
    Heat olive oil in a medium pan over medium-high heat. Add chopped mushrooms and sauté until tender. Remove from heat.

  2. Make the Filling:
    In a mixing bowl, combine:

    • Cooked mushrooms

    • Shredded chicken

    • Mozzarella cheese

    • Mayonnaise

    • Minced garlic

    • Chopped dill

    • Salt and pepper

  3. Prepare the Pastry:

    • Line a baking sheet with parchment paper.

    • Place thawed puff pastry shells on the sheet.

    • Fill each shell with 1 heaping tablespoon of the chicken mixture.

    • Brush the tops with egg wash (whisked egg + water).

  4. Bake:

    • Bake at 390°F (200°C) for 30 minutes, or until golden and puffed.

    • Let cool slightly before serving.


🔁 Make Ahead & Reheating Tips

  • Make Ahead:
    Prepare the chicken and mushroom filling ahead of time and refrigerate in an airtight container until ready to use.

  • Reheating:
    Place on a parchment-lined baking sheet and warm in a preheated oven at 300°F for about 8 minutes until heated through and crisp.
