Easy Slow Cooker Beef Stew


🥘 Hearty Slow Cooker Beef Stew

Rich, comforting, and made for chilly days—this classic stew is a set-it-and-forget-it kind of dinner!

Tender beef, buttery onions, and hearty potatoes all simmered low and slow in a savory broth... This beef stew is the kind of soul-warming meal you’ll want on repeat all fall and winter. Toss everything into your slow cooker and let the magic happen while you go about your day. Bonus? Your kitchen will smell amazing.


🛒 Ingredients

  • 3 lbs. beef stew meat, cubed

  • ¼ cup all-purpose flour (plus 2 tbsp for thickening later)

  • ½ tsp salt (or to taste)

  • 3 tbsp olive oil

  • 3 tbsp butter

  • 3 medium onions, sliced

  • ¼ cup red wine (for deglazing — optional but recommended)

  • 4 large potatoes, cubed

  • 1 cup baby carrots

  • 1 tbsp dried parsley

  • 1 tsp black pepper

  • 2 cups boiling water

  • 1 packet dry onion soup mix (1 oz)

  • ¼ cup warm water (for the thickening slurry)


👩‍🍳 Instructions

1. Prep and Brown the Beef

Place stew meat, flour, and salt in a large zip-top bag. Shake to coat.
In a large skillet, heat olive oil over medium-high heat. Brown the beef in batches (don’t overcrowd the pan), then transfer browned pieces to your slow cooker.

2. Sauté the Onions

In the same skillet, melt the butter and add sliced onions. Sauté for 5–7 minutes, until softened and lightly golden. Add them to the slow cooker.

3. Deglaze the Pan

Pour red wine into the skillet and stir to scrape up any browned bits from the bottom (flavor jackpot!). Pour this into the slow cooker.

4. Add Veggies & Seasoning

To the slow cooker, add potatoes, carrots, dried parsley, and black pepper.

5. Mix & Pour Broth

In a bowl, stir the dry onion soup mix into 2 cups boiling water until dissolved. Pour into the slow cooker.

6. Slow Cook

Cover and cook on High for 30 minutes, then switch to Low for 6 hours, or until beef and veggies are fork-tender.

7. Thicken the Stew

In a small bowl, mix 2 tbsp flour with ¼ cup warm water to make a slurry. Stir into the stew.
Cook uncovered for 15 more minutes to let it thicken.
