🧅 French Onion Chicken & Rice

This dish is my love letter to comfort food—layered with tender chicken, creamy rice, earthy mushrooms, wilted spinach, and crowned with sweet, golden caramelized onions and a blanket of melted Gruyère. It’s a cozy meal that brings the heart of French cooking into your kitchen.

🛒 Ingredients
3 tbsp butter, divided

1 tsp dried thyme

⅓ cup brandy (or dry white wine)

8 oz button mushrooms, sliced

1½ cups uncooked white rice

2 cups baby spinach

3 cups chicken stock

1 cup heavy cream

3–4 cups cooked chicken, bite-sized pieces

4 oz Gruyère cheese, shredded
👩🍳 Instructions
1. Caramelize the Onions
In a large skillet or Dutch oven, heat 3 tbsp butter and 3 tbsp olive oil over low heat. Add sliced onions and stir to coat.
Cook low and slow for 40–45 minutes, stirring occasionally, until deeply caramelized and golden.
Stir in garlic, salt, pepper, tarragon, and thyme. Deglaze the pan with brandy or white wine, scraping up the brown bits, then stir in Worcestershire sauce. Simmer briefly, then remove from heat and set aside.
2. Cook the Rice & Vegetables
In a separate pan, sauté mushrooms over medium heat until golden. Stir in uncooked rice and spinach, letting the spinach wilt.
Pour in chicken stock, bring to a simmer, cover, and cook for 15 minutes, or until rice is tender and has absorbed most of the liquid.
3. Combine with Chicken & Cream
Stir in the cooked chicken and heavy cream. Simmer for a few minutes until everything is heated through and creamy.
4. Assemble & Broil
Preheat broiler. Lightly grease a large casserole dish and pour in the chicken and rice mixture.
Spoon the caramelized onions evenly over the top, then sprinkle with shredded Gruyère cheese.
Broil until cheese is bubbly and golden—about 3–5 minutes. Keep a close eye to avoid burning!
