Flavorful Slow Cooker Barbacoa Beef Recipe


🌮 Slow Cooker Shredded Beef (Barbacoa Style)

📝 Ingredients

  • 3–4 lbs Beef Chuck Roast

  • 1 Medium Onion, diced

  • 4 Cloves Garlic, minced

  • ¼ cup Lime Juice

  • 1 tbsp Ground Cumin

  • 1 tbsp Dried Oregano

  • 2 tsp Chili Powder

  • 1 tsp Smoked Paprika

  • ½ tsp Black Pepper

  • 1 tsp Salt

  • 1–2 Chipotle Peppers in Adobo Sauce, minced (optional, for heat)

  • 2 cups Beef Broth

  • Fresh Cilantro, for garnish (optional)


🔥 Instructions

  1. Prep the Beef:

    • Trim excess fat and cut the chuck roast into large chunks (this helps it cook evenly).

  2. Make the Marinade:

    • In a bowl, whisk together the lime juice, cumin, oregano, chili powder, paprika, pepper, salt, and chipotle peppers.

  3. Load the Slow Cooker:

    • Place beef chunks in the slow cooker.

    • Add diced onion and garlic on top.

    • Pour marinade over the beef.

    • Add beef broth around the meat.

  4. Cook Low & Slow:

    • Cover and cook on low for 8 hours (or high for ~4–5 hours) until the beef is tender and shreds easily.

  5. Shred & Serve:

    • Remove the beef, shred it with two forks, then return it to the slow cooker and mix with the juices.

    • Taste and adjust seasoning if needed.

  6. Garnish & Enjoy:

    • Top with fresh cilantro if you like.

    • Serve in tacos, burrito bowls, rice plates, or even sliders!!
