🌮 Slow Cooker Shredded Beef (Barbacoa Style)

3–4 lbs Beef Chuck Roast

1 Medium Onion, diced

4 Cloves Garlic, minced

¼ cup Lime Juice

1 tbsp Ground Cumin
-
1 tbsp Dried Oregano
-
2 tsp Chili Powder
-
1 tsp Smoked Paprika
-
½ tsp Black Pepper
-
1 tsp Salt
-
1–2 Chipotle Peppers in Adobo Sauce, minced (optional, for heat)

2 cups Beef Broth
-
Fresh Cilantro, for garnish (optional)
🔥 Instructions

Prep the Beef:

Trim excess fat and cut the chuck roast into large chunks (this helps it cook evenly).

Make the Marinade:

In a bowl, whisk together the lime juice, cumin, oregano, chili powder, paprika, pepper, salt, and chipotle peppers.

Load the Slow Cooker:

Place beef chunks in the slow cooker.

Add diced onion and garlic on top.

Pour marinade over the beef.

Add beef broth around the meat.

Cook Low & Slow:

Cover and cook on low for 8 hours (or high for ~4–5 hours) until the beef is tender and shreds easily.

Shred & Serve:

Remove the beef, shred it with two forks, then return it to the slow cooker and mix with the juices.

Taste and adjust seasoning if needed.
